Details

A dressing based on extra virgin olive oil cold smoked over beech wood. 

Characteristics
CULTIVAR: Nocellara del Belice, Biancolilla

TASTING NOTES: This liquid gold is the result of the 
collaboration between two Parma based companies, 
Coppini Arte Olearia and Upstream. It marries two 
excellent raw materials: the Sicilian cultivars
Nocellara del Belice and Biancolilla, with a lightly fruity 
flavour, and beech wood collected on slopes of the 
Apennines in the region of Parma. This smoked oil is 
made using olives crushed within 24 hours of picking 
and and it is cold extracted at a temperature no higher 
than 27°C in order to preserve its organoleptic qualities 
and properties. The smoking process recipe is the same 
used for Upstream salmon. The delicate smoke produced 
by the Monte Caio wood lingers long enough to infuse 
the oil with its aromatic component without altering its 
characteristic taste.

PAIRINGS: Perfect for fish, meat and roast vegetables, or 
for infusing dishes such as pasta or risotto with a unique smoky note.
